Braised cabbage with mushrooms and black moss is an auspicious must-have for Chinese New Year. Many Chinese New Year dishes will incorporate ingredients with symbolic meanings and so in this dish, the black moss (fatt choy) symbolizes prosperity or good fortune. These may not look appetizing but when braised together, the thick tender mushrooms soak up all the unami, cabbage adds natural sweetness to the dish and the fatt choy adds texture.
