Do you know that the origin of the yam ring is a rather romantic one? It was invented by a chef who wanted to win over his future wife. A chef at the old Cathay restaurant in 1958, Chef Hooi Kok Wai, one of the “Four Heavenly Kings” of Cantonese cuisine in Singapore had fallen in love with Leong Ah Lin, a server in the restaurant. The orphaned Leong, however, was raised by nuns and bounded by strict rules regarding romantic relationships. To impress Leong and her guardians, Hooi created the yam ring, which is stir-fried vegetables trapped in a flaky ring of mashed yam and proposed to Leong with it. In many restaurants today, this dish have undergone multiple incarnations, some with chicken or prawns into the mix. But we have presented this meal kit in its original form which is vegetarian.
